Halloween Cupcakes.

Last year we made these Oreo Spider Cupcakes and these Witches Hat Cupcakes. I love easy recipes. They were such a hit I knew I had to share more Halloween cupcakes this year.

They're so much fun to make and the candy eyes seem to give each one a different character. The best part is that after you've dipped the cookies in the white chocolate you can go wild making the mummy bandages.

It's great fun for the kids (and the adults) even if it can get a little messy. And as all it needs is a random abstract pattern they're pretty hard to mess up.

Ingredients to make nutter butter mummies.

What you'll need to make Nutter Butter Mummy Cupcakes:

  • Cupcakes - Use store-bought to save time, a box cake mix or one of your favourite cupcake recipes.

  • Buttercream Icing - Make from scratch or pick up some pre-made from the supermarket.

  • Nutter Butter Cookies - These peanut-shaped cookies are the perfect shape to make these mummies. However, you could use any long thin sandwich biscuit if desired.

  • White Chocolate - My mummies are covered in melted almond bark but white candy melts would also work in this recipe.

  • Candy Eyes - If you can't find candy eyes online or at the grocery store you could use decorating icing and white chocolate chips instead.

How to make Nutter Butter Mummy Cookies.

1. Add the white chocolate to a microwave safe large bowl.

2. Melt in increments of 20 seconds stirring in between each until smooth.

If you don't have a microwave melt your chocolate in a heat-proof safe bowl over a pan of hot water using the double boiler method.

3. Take a baking sheet and cover it with parchment paper.

4. Dip the Nutter Butter cookies in the melted Almond Bark or white chocolate until they're fully coated.

Remember to keep hold of the excess chocolate. You'll be needing this later.

5. Place on parchment paper and put in the fridge for 5-10 minutes. The chocolate coating doesn’t have to be completely set. Just enough so that the iced bandages don’t sink into the chocolate base.

6. Spoon the remaining white chocolate into a piping bag. If the chocolate has begun to harden pop it back in the microwave and heat for 15 seconds.

7. Remove your coated cookies from the fridge.

8. To create the bandages pipe the remaining white chocolate over the cookies going back and forth in a zig-zag pattern. This is the fun part. Make sure to get the little kids involved in this step.

Top Tip:

  • Depending on the room temperature the white chocolate can set fast so you may have to work quickly.

  • If you find the melted chocolate is too thick to pipe add a tablespoon of coconut oil to help smooth it out.

  • When piping on the bandages if you don't have a piping or pastry bag you can use a plastic bag (these Ziploc ones are great). Pour in the melted chocolate and seal shut. Snip off a corner of the bag and use it to drizzle on your chocolate bandages.

Serving Suggestions:

  • You can easily turn these cookie mummies into Nutter Butter Ghosts. Simply skip step 7 and instead of adding the bandages leave your cookies as they are and pop on a couple of eyes.

  • Want to make Halloween Nutter Butter Mummy pops? Insert a popsicle stick into the bottom of each cookie before you coat it in the melted chocolate.

  • And if you're not keen on cupcakes, how about grabbing a tray of brownies and adding one of your fun Halloween cookies to the top of each one for cute mummy brownies.

  • Another great idea is to decorate a whole cake in these mummy nutter butter cookies. How amazing would that look?

How to store leftover Mummy Nutter Butters.

Store the cookies in an airtight container at room temperature for up to a week. Do not store them in the refrigerator as the candy eyes can bleed when they get damp. Add some parchment paper or wax paper between each layer.

For the cupcakes, I would also store them in an airtight container but only for 2-3 days depending on the cupcakes. You may find store-bought cupcakes last longer than homemade ones.
